“Hokkaido Vegetable Spotlight #3: The Eggplant - Farmer’s Son” - Enjoying delicious meals made with freshly harvested vegetables from around Hokkaido!
Welcome to the third installment of our Hokkaido vegetable spotlight series! The focus of today’s entry is the magnificent eggplant. For a delicious summer dish featuring this veggie we went out to Urasando Street, near Maruyama Park, to visit the flagship restaurant “Farmer’s Son.” Dishes at this restaurant have a unique originality and are made with completely organic Hokkaido vegetables. Let’s see what they have to offer!

Today we’ll be enjoying the “Spicy Pork Shabu-Shabu with Fried Eggplant,” which will be on the restaurant’s seasonal menu through early September. The eggplant used is called “Swallow Eggplant” and comes from farms in the nearby Ebetsu area. In this dish the eggplant speaks with a classic flavor. Heated to soften its texture, and then stewed in a delicious consommé, it is served alongside boiled pork, from the town of Niki, dressed in a Cajun spice mix of coriander and cumin.

It goes without saying that pork and eggplant make an excellent combination of flavors, but the eggplant also helps to counteract the spiciness, making this a dish that can be enjoyed even on the hottest summer days. The distinctive purple skin of the eggplant also contains plenty of polyphenols, which, some believe, can have an anti-aging affect. That’s right, a delicious meal with possible health benefits!
